The companies review research, fund research and the undertake research to find the chemicals, sounds, smells, colours, food peice sizes and physical actions that trigger the biggest cognitive addictions. The most addictive foods have a special balance of these features.
Bearing this in mind, you should know that sauces and flavorings are treated differently by the US FDA and allowed much higher amounts of restricted additives. Putatively this is because they are not supposed to be consumed in large amounts. In reality they are adding aome pretty gross stuff.
