The only reason I would do this would be to compile iOS apps, because I am not buying an iMac just for that. Except there’s already services out there that offer the solution, plus I can also access other hardware too.

You’re still paying for the more expensive ram. It’s just baked into a higher monthly rental payment. Why pay more for ram one time when you could pay more for ram every month for the rest of your life?
