But you characters still have ATB bars that fill, at which point you can perform abilities, cast spells, call forth summons, or use items by spending ATB. This can be done instantly with shortcuts, or you can slow down time in a tactical mode, while you choose your next action.
iirc the remakes have a mode where the action part olays out automatically (like a cutscene) and you only need to select ATB actions like a turn-based game. Still not like the original tho
